Dr. Nancy Munoz is the Assistant Chief for Nutrition and Foodservice for the Southern Nevada VA Healthcare System that provides services to 68,000 Veterans in the Las Vegas area. Prior to this role, she spent 25 years working for an eldercare company in which she supervised the performance of 107 Registered Dietitian/Nutritionists in 144 skilled nursing and assisted living facilities. Dr. Munoz is a lecturer for the University of Massachusetts Amherst Nutrition Department.

She received her BS in Foods and Nutrition from Marymount College in New York, her Masters in Healthcare Administration from the University of Maryland, and a Doctorate in Clinical Nutrition from Rutgers University.

As a registered dietitian nutritionist and a member of Academy of Nutrition and Dietetics, Dr. Munoz has a long history of professional service. She has served in several roles in the Academy of Nutrition and Dietetics including Professional Development Coordinator for the Dietetics in Health Care Communities practice group and Communications Director for the Healthy Aging DPG. She currently serves as the Professional Development Chair for the Dietetics in Healthcare Communities DPG, and is a director for the National Pressure Ulcer Advisory Panel board.

Dr. Munoz is the co-author/ editor of Nutrition Assessment: Clinical and Research Applications (Jones and Bartlett Publishers, Burlington, MA. First Edition January 2018) and Nutrition for the Older Adult (Working on the third edition).
